Try Tools/Accounts - Mail tab, highlight the account you wish to be the
default and click the Default button. If that's not what you are referring
to, please post back with more details as to exactly what you need.
You can also take the old account you no longer wish to use and either
delete it, or double click it in the list, and remove the check to "include
this account when receiving mail."

Well, I THOUGHT I was being explicit, but I'll try harder.
ISP info: (AT&T)
There are two email addresses set up for the same man. One is JSmith, as an
associate member of HJones. The second is J.Smith (note the dot), as an
independent member on his own. He had to create his own because HJones is
getting DSL, which will severely restrict JSmith's abilities. Both JSmith
and J.Smith wii be active for some time.
OE info:
OE is dealing with a single "account", namely AT&T's
(postoffice.worldnet.att.net). In the profile associated with that account,
we showJ.Smith@att.net for the email address; nevertheless, when we load OE
and download mail to the Inbox, we continue to get mail only for JSmith, and
not for J.Smith. So there has to be something we're missing in OE that tells
AT&T whose mail we want.
I hope this will help you to help me.

PROBLEM RESOLLVED!
I found a boxx marked "Incoming Mail Server" that still had JSmith instead
of J.Smith. I changed it and everything worked as expected. Of course, I
wouldn't have got this far without your previous reply, so THANK YOU for that!

Glad you got it working. Thanks for the feedback.

I suppose you could have guessed. It aint over until the fat lady sings.
In my final test I sent an email to JSmith AND J.Smith; once by showing them
both in the To: box, and once by sending an independent email to each of them.
Then I went to their OE, and thought that I would default to getting emails
addressed to one or the other (based on my Tools/Accounts default). In both
cases, I got both letters on the same Send/Receive request --as though the
system were sensitive to both accounts at the same time.
Comment?

Sounds like you need to use Message Rules to route the incoming mail for
each user into an appropriate folder. Which has the added benefit of
keeping the Inbox smaller in size which should help prevent corruption of
it.
See here for some reasons why Message Rules may not work as you initially
intend:

Good luck.

I gather that it didn't surprise you that we were getting stuff for both the
old and the new POBoxes at the same time.
Actually, what's happening isn't all that bad. We don't have a _logical_
need to split the mail into two parts. It's only a _physical_ need to
replace the old PO Box with a new one, because the old one will be less
useful, thanks to AT&T's rules about sharing dialup with a DSL user.
Eventually we'll have everybody using the new one, and we'll also put in some
blocking on the old one for the nasties.
My final (!) question then is: do you foresee any problem with letting it
all come into the same place simultaneously as I've described it, since it
turns out to be convenient for us?

No, it should work w/o problem. If you have a problem, feel free to post
back and someone will try to help with it. Good luck.
