I'm sure there is an easy answer and I am just being stupid but...
All I want to do is have the same stationary background, font size and font
colour appear each time I want to send an e mail.
Whats happening at the moment is the background is coming up correctly but
the font size and colour sometimes will be fine but more often than not will
be the wrong values.
I have followed the help guide but don't seem to be getting it right.
Is there any chance somebody could reply with an idiot proof step by step
guide?

Mick...the font type, size and color is set by going to: Tools-Options-Compose.  --  If your page opens and you are viewing plain text, click on Format...Rich Text.  It will instantly change to your preferences.

Keep in mind that your recipient must have your font choice on his machine as well, or he/she will view your email in their default font.
