WET...White Potato Pie

Basic Pastry dough for Pies

2 2/3 cups all purpose flour
2 sticks very cold unsalted butter cut in 1 inch pieces
1 teaspoon salt
1/2 cup ice water

Cut butter and salt into flour until it forms a crumbly mixture.
Add the ice water and mix well until you have a nice smooth dough.
Divide dough into three equal parts. Roll each part into a ball and then flatten into a disc shape.

Refrigerate dough at least 1 hour.

Roll each disc of dough on a lightly floured surface to a cirlce about 1/8 inch thick.
Place dough in pie pans. This is enough dough for 3 ( 9 inch pies).

White Potato Pie  

Pre-heat oven to 350F or 175C

This recipe yeilds 1 pie

2 medium potatoes, cooked, peeled and mashed.
2/3 cup butter
1 cup sugar
1/2 teaspoon baking powder
1/8 teaspoon salt
1/2 cup whipping or heavy cream
1/2 cup milk
2 teaspoons grated lemon rind
2 Tablespoons lemon juice
1 teaspoon vanilla extract
1/8 teaspoon ground nutmeg
4 eggs, beaten
1 unbaked 9 inch pastry shell

Combine potatoes, butter, sugar, baking powder, and salt in a medium mixing bowl; mix well.
Gradually add the whipping or heavy cream and milk, stirring until well blended. Stir in lemon
rind, juice, vanilla extract and nutmeg. Add eggs and mix well.

Pour mixture into pastry shell and bake at 350F (175C) for 55 minutes or until a knife inserted in center comes out clean. Cool

You're welcome!  I've never been fond of sweets..as children, my cousin
would ask for a piece of cake and I would ask for a piece of
cheese...However I do enjoy pies. I came across this recipe about 17 years
ago and I remember that the first time I made it, my family thought I was
nuts...They loved it!..I've been making it ever since.

You really will enjoy this one.

Make sure you bake it early enough in the day, so that it's cool for
dessert. You shouldn't try to cut this one while it's still warm.

This sounds unusual, but a fun one to try.  Is it a dessert or main dish? With the sugar and cream, sounds like dessert.

It doesn't make this pie lover cry...I make three pies at time...that dough
gets used up quickly..

Thank you Grandma. I came across this one about 17 years ago and have been
making it ever since. It has a very delicate flavor. If you decide to try
it; make sure it is completely cool before slicing otherwise it will fall
apart on you.

I think you will enjoy it very much. The flavour is more delicate than that
of the sweet potato pie (I make that one as well).
Just be sure it's completely cool before you try to slice it.
