I would like to print a table that is 11" wide by 8 1/2"
long.  I am set up for paper that is in the tray at 8 1/2".
I am sure there is a way to change the file to move from 8
1/2  etc.

Print it in landscape mode.  You should be able to do so (depending on the
software you're using, since you didn't bother to mention that essential
fact) in File/Print Setup.
