Sure can, go to "Folder Options" and click on the "File
Types" tab, scroll over to the extension that you were
trying to play and where it say "Open With" on the bottom,
press the "Change" button and find the program you want to
open it with.

Open QuickTime's preferences dialog and remove its ownership of media
extensions. Beware that Apple programs like QT and iTunes are very
aggressive about taking control back of such files.
Open Media Player, Tools > Options > File Types, and check the desired
media extensions.

That certainly the case with the new QT7, which I got conned into downloading
QT7 in the process of installing iTunes, which I want only for downloading
podcasts (where it seems better that anything else free I have found). It
took about 10 gos at setting the MIME types before the Apple OCX finally
admitted defeat and let me play embedded MP3s in WM10 again. Real Player
seems almost, but not quite, so bad.
