Public Computer Lab Access

I recently upgraded to Windows Vista for a computer lab. Is there anyway I
can limit the standard accounts even more than what Windows have provided?
Basically these computers are publicly accessed computers, so I only want the
user to have access to Microsoft Office and the Internet and perhaps a few
other programs (like AIM etc). Anyone have suggestions on how I can do this
in Vista?

It might take a little work and troubleshooting, but you could setup
"software restriction policies" within the computer secuirty section of group
policy.
