I can open a new document, I can type papers, whatever I want. I can't close
that document and days later open it to copy, paste, edit it. I also can't
copy tables created by my instructors to edit them. Information on how to
change the settings would be great.

Did a trial version of Office come with your computer? After the trial is
finished, if you haven't upgraded to the non-trial (paid) version, Office
goes into a reduced functionality mode. It sounds like this may be what
happened.
