Go to Tools, Accounts, select that mail account, Properties.
On the General tab, you can change your email address.
Be aware that if you delete your 'From' email address, the recipient
won't be able to reply to you. Also, many mail servers will not accept
mail without a valid return address.

thanks Gary, as u can see ,the name can be changed, but as in your
e-mail to me the e-mail address is still present, so anyone can pick up
on the address,i know about undisclosed recipitants in the Bcc. which i
use all the time, but i do not like my address showing,i rember years
ago with 98 (i think) the address never showed i just noticed it in
vista(windows mail) i just tried outlook express from my xp computer
and it is doing the same think, can you help or are we stuck with this
also am i the only one who seemes to care about this

Outlook Express hides the address, but doesn't remove it. If you send
a message to someone else, it depends on what software they are using
whether they can see it or not. If you managed to find some software
that actually removed the addresses it was sending to, the mail would be
unlike to arrive where you sent it.
Windows Mail doesn't offer the option of even hiding it. However, it
does offer the option of putting the addresses you are sending to on
the Bcc: line, so that the person you are sending the mail to will get
a copy with only your address and his or her address included, and
email software often hides the whole Bcc: line in the copy that arrives.
If you want to use the Bcc: line and don't see it, start a new message,
and in the new message window, click View, then All Headers. Note
that some email providers refuse to handle mail the all the addresses
you are sending to on the Bcc: line, so you may need to put your own
address on the To: line.

As I understand it, you want to completely suppress your email address.
Removing the address from the account description won't change the message
headers, and Windows Mail won't support that.
Your option is basically to send using another email address. Often,
anonymous remailers are used for this purpose.
