I want to scan text but the profile has only file types for pictures.  How do
I get file types for text?

You will have to use a different program to convert scanned images to text.
That is usually called OCR (Optical Character Recognition).
I can paste an image into OneNote and have it convert to text for either
searching purposes within OneNote or to copy the text from the image to use
in a word processing program for example.
