Printer Driver Issues (Big Challenge)

We have an Epson DFX8500 printer and want to use the old driver from Epson,
however Windows keeps installing the newest drivers from Microsoft.  How can
I turn off Windows XP auto install selection?  The reason for doing this is
the XP driver does not support the 11x8.5 fan fold the old driver does and
work great.

This is a real pain, I installed the older driver and everything works
perfectly however when I reboot then the newer windows XP driver gets
installed and everything is screwed up again.

How can I tell XP to stop updating the driver????  Its like a plaugue that
won't give up. (smile)

Thank you in advance for solving this pain in the neck issue,

PS.
I have tried things like turning off plug-n-play (opps big mistake)
Removing the XP Driver from the Print Server Properties
Tried deleting the installed drivers in the
C:\windows\system32\spool\drivers\w32x86 area
