How do I delete the list of documents under the Recent Documents tab so that
the next person on the computer doesn't see what I've been doing?

Try; TaskBar|Properties|Start Menu|Customize|Advanced|Clear List

These lists are profile specific so other users will not see them unless you
let them use your credentials to logon with.

task bar / start menu properties, customize start menu, click on the advance
tab. under recent documents click clear list.
