I can't seem find a reference documenting all the changes and differences.  
Does this exist?

I havent seen a complete reference but here are some of the new
features

- Support for unattended installations of Windows XP x64 Edition
- Support for WinPE 2005
- Computer Imaging System Config Utility has per-build action lists
- Updated documentation
- ZTI is improved with more scenarios and samples
- There is a ZTI MP for MOM 2005

We're working on a more detailed "upgrading" white paper, but the list below
does describe the major changes.
