I assume the shop has a retail version of Xp that allows them to put a copy
on any machine, but it must have a COA label for the correct version.

I can ask them to remove Vista as that is what I don't want, but that would
leave me with me with a Xp Os and a Vista COA label, unless of course the
shop stick on a new label for Xp.

I know little of this subject and am trying to anticipate problems before
they occur..

It depends on the country where you live. In the
USA or Canada, when buying new from a shop
both PC and OS, it is normal to expect:
1. Free installation of the OS
2. Full documentation of the legality of the OS
purchased.
There is nowadays much pressure on the retail
trade to sell only Vista installations: but consumer
demand persists for XP installations so XP customers
should insist on buying what they prefer (not what
Microsoft prefers.)

They don't just stick on a label; you have to buy the Licence.
That is what it is.
A Vista COA can not be used with an XP Operating System.
Also, a NEW Computer running Vista may not have XP Drivers written for the
Hardware.
Find the computer you want, and check at its manufacturers's website about
XP drivers.
